Maracaibo Creole impresses through its creaminess, combined with a delicate cream-caramel note. The traditional, gentle processing method beautifully unfolds a light vanilla-bourbon aroma, with a hint of honey. The fresh, fruity, raspberry note transfers to a long, subtle, smooth melting finish.
The almonds caramelized with Maple Syrup will add a distinct maple flavour and a crunchy texture.
About the Maker:
Ludwig Ratzinger was born in Bavaria, Germany, where he grew up in a family owned bakery business. After apprenticing in pastry in Garmisch Partenkirchen Business School, then a bakery in landsberg, he came to Canada in 1990. He worked at the Chateau Laurier from 1991-1999, the Governor General’s residence in 2000, and ran a catering business and taught cooking and baking throughout the region, before launching Fine Chocolate by Ludwig handmade artisanal chocolate.
