Noon  - 2:30 PM
$70 per person, excluding HST.  This is a hands-on class.

MENU:   Pureed soup with fennel, celery root and leeks served with sour cream, chive and dill, garlic crostini; Pan seared trout with leek fondue, baby carrots in vanilla sauce; Crispy pork tenderloin medallions with white wine and caper sauce, seasonal roasted vegetables; Crepes stuffed with caramelized apples and pears with maple butter cream sauce.

Classically trained French chef with a love of both Asian and European food.  Stephane will be able to highlight the subtle differences between these different styles of cuisine.  Also one will learn how certain cooking techniques apply to many cuisines.  Stephane was a former chef of L’Echelle du Jacob in Aylmer, Quebec which practised using locally-sourced produce and meats over 25 years ago.
